Cherry-Vanilla Granola




  • 4 cups old-fashioned rolled oats
  • 1 cup wheat germ
  • 1 cup unsweetened shredded coconut
  • 1 to 1 ½ cups sliced almonds (optional)
  • ½ cup honey
  • 3 tablespoons molasses
  • 3 tablespoons water
  • 1 generous teaspoon vanilla extract
  • ¼ cup coconut oil
  • ½ teaspoon kosher salt
  • ½ teaspoon ground cinnamon
  • 1 cup dried cherries



  1. Place oven racks in middle two positions. Preheat oven to 275º.
  2. Line 2 baking sheets with parchment paper. Set aside.
  3. Combine oats, wheat germ, and coconut in a large bowl.
  4. Combine honey, molasses, water, vanilla extract, and oil in a small saucepan over medium-low heat. Cook, stirring frequently, until mixture is uniform and melted.
  5. Pour honey mixture over oat mixture. Sprinkle with salt and cinnamon, and stir to combine, using your hands or a wooden spoon. Divide mixture among the prepared baking sheets.
  6. Bake, stirring mixture and switching positions of pans halfway through, until granola is golden, about 15 to 25 minutes. (It won’t feel crisp until after it cools.) Keep an eye on it, as it goes from golden to burned in a matter of minutes.
  7. Cool on baking sheets set on wire racks until granola is cool to the touch and crisp. Place in a bowl; add cherries and toss gently to combine.
  8. Store for up to 1 week in an airtight container.
